Try a Tomato Tart

One of our Veggie Friends contacted me last week about a special order, and my interest was piqued! She wanted to create a flavorful tomato tart, and it looked so good I wanted to pass along every bit of info to you all so you could give it a go, too. Thank you to Sue W. for the recipe and photo!

Sue’s Beautiful Tomato Tart

Tomato Galette, as this tomato tart is officially known by, is a simple recipe that is easy to follow. Bon Appetit features the recipe our friend followed. It contains 12 ingredients, some of which you probably already have with the exception of the fresh ingredients like tomatoes, eggs and chives (which we will happily provide!). The flakey crust is included in the ingredients list and is considered fool proof by the comments under the recipe. Here’s the list:

2 C flour, plus extra for dusting

2 1/4 tsp. kosher salt

3/4 C chilled unsalted butter

1 Tbsp apple cider vinegar

1 1/2 lbs heirloom tomatoes sliced 1/4 inch thick (any flavorful, homegrown tomatoes will work, though!)

2 garlic cloves, thinly sliced

4 oz firm cheese, when finely grated equals about 1 1/2 cups (think asiago, cheddar, gouda)

4 quail eggs or 1 large chicken egg

Flakey sea salt

Fresh ground pepper

1/2 Lemon

1 Tbsp finely chopped chives

I won’t bore you with the step by step instructions, this was just enough to whet your appetite (sorry, not sorry for the pun!) Here’s a link to the full recipe/instructions. As a side note, the dough can be made up to 2 days ahead of time and needs at least 2 hours to chill, so plan accordingly. and by the looks of the photo sent to me, the finished product looks amazing! I swear I can smell it through the picture!
